Saba Bread Street: a country united by tradition

“Pani ‘e saba is a sweet “po legai sa genti antiga e po legai su santu” (to bind oneself to one’s ancestors and to ask the saint for grace). A journey to discover Sini, its historic center and its architecture through the rituals of the traditional votive cake whose recipe made of almonds, raisins, sapa, flour and fragrant spices dating back to the 1700s unites generations and represents all its people. Starting from the “Casa Cau”, an itinerary will be followed through streets and old houses in each of which the path of preparation of the dessert that covers the entire calendar year will be recounted: the harvesting of the almonds, the withdrawal of the must to prepare the sapa, and the drying of the orange peels as a spice. Even going so far as to narrate the role of women in passing on this precious tradition.
