Three types of milk were processed in the Cala d’Oliva dairy: sheep, goat and cow.
The inmates, former shepherds, produced cheese (butter, perette, ricotta, sheep and goat cheese with camembert and brie type processing) that was sold at the commissary. Their supervisor was prison guard Vincenzo Denofrio.
